So, I made a really good ceviche (also spelled seviche and sebiche) last night, which is while easy, was tedious to make. There was a lot of prep work in dicing a lb of fish and squeezing of various citrus fruits. Anyways, it really turned out fantastic, it’s very healthy, and full of bright, south American flavors.
It’s served cold, and I’m betting it would go really well with a Mojito on a hot day.
Here’s the recipe of what I made if any of you want to try it on your own.
1lb Dover Sole fish, diced into 1/4″ cubes
1 cup finely chopped vine ripened tomatoes (approx 2 smaller tomatoes) (regular tomatoes would probably work fine)
1/2 finely chopped sweet walla walla onion
1/2 cup fresh squeezed lime juice (don’t skimp and buy the pre-bottled stuff..squeeze the limes yourself — this was approximately 4 limes for me) — some pulp is ok, it gives the juice texture
1/2 cup fresh squeezed orange juice (again, don’t skimp, squeeze it yourself. I used 1 Valencia orange for this)
1 fresh squeezed lemon (note: I used one lemon, not 1 cup of lemon)
1 tbs of lime zest
1 tbs of orange zest
1 finely chopped, seeded Jalapeno
1 small handful finely chopped cilantro
1 small handful finely chopped parsley
Dash or 2 of powdered garlic
Dash of Cheyenne pepper
Salt and Pepper to taste
Mix ingredients in a glass bowl, cover, and put it in the fridge for 3-4 hours.
The acid from the citrus fruits will chemically ‘cook’ the fish, turning it from clear white to opaque white (this happens after about one hour, but letting it sit for longer will really let the flavors mingle)
I halved some flower tortillas (Mission brand), light oiled one side, gently folded, and toasted the tortilla to make a shell that’s a cross between a hard and soft flower taco shell. I placed spinach leaves inside the tortillas, as well as a drop or two of hot sauce.
Place the ceviche inside the tortilla and enjoy. You can also use tortilla chips, or serve with corn, or cold, sliced sweet potato.

I’ve gone on my second riding/learning session on my bike, I found a local store that had the helmet I wanted.

I’m getting a lot more comfortable with my turning, although, I still have the bad habit of wanting to put my foot down in the corner, when really, my ankle is not going to support the weight of myself AND a bike that weights approximately 400lb (wet weight). Cam and I took the wheels off yesterday so the dealer could put the new tires I had ordered on, which was amazingly, a lot easier than I thought it would be. I also discovered that putting the bike up on the center stand with a car tire under the front of the frame is more stable than using the side stand. It does look really odd, however.
